Hosting: Job-shadowing and professional trainings

As part of an exciting culinary adventure, six participants from “BS 03 | Berufliche Schule Hotellerie, Gastronomie und Lebensmittelhandwerk” in Hamburg, Germany, travelled to Foligno, Italy, for an immersive exploration of Italian gastronomy and culture. From 16 to 20 October 2023, they immersed themselves in a series of enriching activities designed to deepen their understanding of Italian culinary traditions.

The programme offered a mix of hands-on experiences and cultural excursions, giving participants an overview of Italy’s rich cuisine. Cooking workshops at renowned restaurants such as “Il Cavaliere” and “Al Monastero” allowed participants to practise their culinary skills under the guidance of experienced chefs, while learning about the techniques and ingredients that define Italian cuisine.

 

Guided tours of Foligno’s historic sites, including the majestic Palazzo Trinci and the mediaeval shops of Bevagna, gave participants an insight into Italy’s historical past and its influence on contemporary culinary practices. In addition, food and wine tastings at Norcineria Massatani and other local establishments offered a tasty journey through the flavours of Umbria, giving participants an even greater appreciation of the region’s gastronomic treasures.

 

Beyond the gastronomy, participants also had the opportunity to explore the picturesque landscapes of Montefalco, Valnerina and Sibillini, immersing themselves in the natural beauty of the Italian countryside.

 

 

Thanks to this experience, the participants not only improved their culinary skills, but also deepened their knowledge of Italy’s diverse culinary traditions. Armed with their new knowledge and inspiration, they returned to Hamburg ready to apply what they had learned to their careers in the hotel and food industries.
